Low Fat Pork With Onions Olives Peppers And Mushrooms Recipe

Ingredients

  • nonstick spray coating
  • 12 ounces boneless pork loin, cut into 1/4 inch thick slices , 8 slices
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 teaspoons olive oil
  • 2 medium onions, cut into thin wedges
  • 2 medium green sweet peppers, cut into thin bite-size strips
  • 1/2 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/3 cup chopped pimento stuffed green olives
  • Method

  • Spray a large skillet with nonstick coating: heat over medium-high heat.
  • Season pork with salt and pepper, cook half of the pork slices at a time in skillet for 2 to 3 minutes or till meat is browned and no longer pink in center turning once
  • Remove from heat: keep warm.
  • Add olive oil to skillet.
  • Heat over medium-high heat.
  • Cook onions, peppers, mushrooms, garlic, and cumin in skillet about 4 minutes or till crisp tender.
  • Stir in olives; heat through.
  • Serve vegetable mixture with pork slices.
