Low Fat Heartland Herb Chicken Recipe

Ingredients

  • 1/3 cup lemon juice
  • 3 tablespoons dijon mustard
  • 1/4 cup sliced green onions
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely chopped
  • 1 teaspoon dried tarragon leaves, or 1 tablespoon chopped fresh , tarragon leaves
  • 1 pound skinless boneless chicken breast halves
  • Method

  • Prepare charcoal or gas grill or preheat broiler.
  • In small bowl, combine lemon juice, mustard, green onions, oil, garlic and tarragon; mix well.
  • Reserve 1/4 cup.
  • In shallow dish or plastic bag, pour remaining marinade over chicken.
  • Cover; marinate in refrigerator 30 minutes to 1 hour.
  • Remove chicken from marinade.
  • Over medium-hot coals, grill or broil until tender, basting frequently with reserved marinade.
  • Makes 4 servings.
  • Preparation time: 15 minutes.
  • Marinating time: 30 minutes.
  • Cooking time: 20 minutes.
