Low Fat Guilt-Free Linguine Alfredo Recipe

Ingredients

  • 1/4 cup oil-purpose flour
  • 1/4 teaspoon garlic powder, or 2 garlic cloves, minced
  • 1/4 teaspoon pepper
  • 14 1/2 ounces chicken broth
  • 1/3 cup plain yogurt
  • 6 cups hot cooked linguine, about 12 ounces dry , cooked without salt
  • 6 tablespoons grated parmesan cheese, divided
  • chopped fresh parsley
  • Method

  • In medium saucepan, gradually mix broth into flour, garlic and pepper until smooth.
  • Over medium heat, cook 5 minutes, or until mixture boils and thickens, stirring constantly.
  • Remove from heat.
  • Stir in yogurt.
  • Toss with pasta and 4 tablespoons cheese.
  • Sprinkle with parsley and remaining cheese.
  • Per serving: About 382 calories, 15g protein, 69g carbohydrate, 4g fat, 11% calories from fat, 7mg cholesterol, 558mg sodium, 2g fiber
