Low-Fat Grouper Lorange Recipe

Ingredients

  • 2 pounds grouper 4 skinless, 8-ounce fillets,
  • 1/2 inch to 3/4-inch
  • thick
  • 2 tablespoons vegetable oil
  • 2 tablespoons orange juice
  • 2 teaspoons grated orange rind
  • 1 Dash nutmeg
  • 1 Dash pepper
  • Method

  • Preheat oven to 375 degrees.
  • Lay grouper fillets in a large, shallow, greased baking dish.
  • Add enough water to reach halfway up the thickness of the fish.
  • Mix together oil, orange juice, and rind; pour over fish.
  • Sprinkle with nutmeg and pepper.
  • Bake 12 to 15 minutes depending on thickness.
  • Do not overcook.
