Low Fat Grilled Halibut With Stewed Fresh Tomatoes Recipe
Ingredients
4 halibut fillets, skinned, 6 to 8 ounces each
salt, to taste
freshly ground black pepper, to taste
2 tablespoons olive oil
nonstick cooking spray
1/4 cup finely chopped red onion
1/2 teaspoon minced garlic
4 large ripe tomatoes, peeled, seeded and chopped
1/4 cup dry white wine
1/4 cup chopped flat-leafed parsley
1/4 cup chopped fresh basil
Method
Prepare charcoal or gas grill or preheat broiler.
Season fillets with salt and pepper; brush on both sides with oil.
In large noncorrosive saucepan, heat cooking spray over medium heat.
Saute onion and garlic 1 minute; do not let onion brown.
Add tomatoes and wine; simmer 2 to 3 minutes.
Add parsley and basil; season with additional salt and pepper.
Remove from heat; cover to keep warm.
Grill or broil the halibut 3 to 4 minutes, until just cooked through.
Place on serving plates and spoon sauce over fillets.
Makes 4 servings.
Preparation time: 15 minutes.
Cooking time: 10 minutes.
