Low Fat Grilled Halibut With Stewed Fresh Tomatoes Recipe

Ingredients

  • 4 halibut fillets, skinned, 6 to 8 ounces each
  • salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • nonstick cooking spray
  • 1/4 cup finely chopped red onion
  • 1/2 teaspoon minced garlic
  • 4 large ripe tomatoes, peeled, seeded and chopped
  • 1/4 cup dry white wine
  • 1/4 cup chopped flat-leafed parsley
  • 1/4 cup chopped fresh basil
  • Method

  • Prepare charcoal or gas grill or preheat broiler.
  • Season fillets with salt and pepper; brush on both sides with oil.
  • In large noncorrosive saucepan, heat cooking spray over medium heat.
  • Saute onion and garlic 1 minute; do not let onion brown.
  • Add tomatoes and wine; simmer 2 to 3 minutes.
  • Add parsley and basil; season with additional salt and pepper.
  • Remove from heat; cover to keep warm.
  • Grill or broil the halibut 3 to 4 minutes, until just cooked through.
  • Place on serving plates and spoon sauce over fillets.
  • Makes 4 servings.
  • Preparation time: 15 minutes.
  • Cooking time: 10 minutes.
