Low Fat Garlicky Pork With Basil Recipe

Ingredients

  • 3/4 pound lean pork tenderloin
  • 1 teaspoon vegetable oil
  • 1/4 cup chopped fresh or
  • 1 tablespoon plus
  • 1 teaspoon dried basil
  • 1/4 cup chicken broth
  • 1/8 teaspoon ground red pepper, (cayenne)
  • 4 cloves garlic, crushed
  • Method

  • Trim fat from pork tenderloin.
  • Cut pork crosswise into 8 pieces.
  • Flatten each piece of pork to 1/4-inch thickness between waxed paper or plastic wrap.
  • Cook pork in oil in 10-inch nonstick skillet over medium-high heat about 3 minutes, turning once, until brown.
  • Stir in remaining ingredients.
  • Heat to boiling; reduce heat.
  • Cover and simmer about 5 minutes or until pork is done.
  • :SERVINGS MICROWAVE DIRECTIONS: Omit oil.
  • Prepare pork as directed.
  • Place pork in rectangular microwavable dish, 13 X 9 X 2 inches.
  • Mix remaining ingredients; pour over pork.
  • Cover tightly and microwave on high 4 to 6 minutes, rearranging pork after 2 minutes, until pork is done.
