Low Fat Eight-Layer Appetizer Spread Recipe

Ingredients

  • lettuce leaves
  • 3/4 cups vegetarian refried beans
  • 4 ounces diced green chili peppers, drained
  • several dashes bottled hot pepper sauce
  • 8 ounces light dairy sour cream
  • 1/3 cup salsa
  • 3/4 cups chopped avocado
  • 1/2 cup finely shredded reduced fat monterey jack, or cheddar cheese , 2 ounces
  • 1/3 cup sliced green onion
  • 1 cup chopped lettuce
  • 1 small tomato, seeded and chopped, about 1/2 cup
  • 10 ounces light tortilla chips, about 8 cups
  • Method

  • Partly line a serving plate with lettuce leaves.
  • Stir together refried beans, chili peppers, and hot pepper sauce in a small bowl.
  • Spread bean mixture over the lettuce leaves, making a layer about 1/4 inch thick.
  • Spread sour cream in a layer atop the beans.
  • Spoon a layer of salsa atop the sour cream; swirl salsa into sour cream.
  • Sprinkle with avocado, cheese, green onions, lettuce, and tomato.
  • Serve with tortilla chips.
  • Makes 16 servings.
