Low Fat Eight-Layer Appetizer Spread Recipe
Ingredients
lettuce leaves
3/4 cups vegetarian refried beans
4 ounces diced green chili peppers, drained
several dashes bottled hot pepper sauce
8 ounces light dairy sour cream
1/3 cup salsa
3/4 cups chopped avocado
1/2 cup finely shredded reduced fat monterey jack, or cheddar cheese , 2 ounces
1/3 cup sliced green onion
1 cup chopped lettuce
1 small tomato, seeded and chopped, about 1/2 cup
10 ounces light tortilla chips, about 8 cups
Method
Partly line a serving plate with lettuce leaves.
Stir together refried beans, chili peppers, and hot pepper sauce in a small bowl.
Spread bean mixture over the lettuce leaves, making a layer about 1/4 inch thick.
Spread sour cream in a layer atop the beans.
Spoon a layer of salsa atop the sour cream; swirl salsa into sour cream.
Sprinkle with avocado, cheese, green onions, lettuce, and tomato.
Serve with tortilla chips.
