Low Fat Couscous Porridge Recipe

Ingredients

  • 2 cups skim or low-fat milk
  • 1/3 cup chopped dates
  • 1 tablespoon honey, or to taste
  • 1 teaspoon pure vanilla extract
  • 2/3 cups couscous, preferably whole-wheat
  • Method

  • In a saucepan over medium heat, combine milk, dates, honey and vanilla; heat until almost boiling.
  • Stir in couscous and remove the pan from the heat.
  • Cover and let stand until the couscous has absorbed most of the liquid, about 5 minutes.
  • Stir until creamy.
  • Divide between 2 bowls and serve.
  • Makes about 2 cups, for 2 servings.
  • Calories per serving: 17 grams protein, 2 grams fat 0 gram saturated fat, 89 grams carbohydrate; 130 mg sodium; 4 mg cholesterol; 3 grams fiber
