Low Fat Citrus Herb Dressing Recipe

Ingredients

  • 1/2 medium red bell pepper, cut up
  • 2 medium tomatoes, cut up
  • 1/2 cup fresh basil leaves, loosely packed
  • 2 cloves garlic, minced
  • 1/2 cup fresh orange juice
  • 1/2 cup fresh parsley, loosely packed
  • 1/4 cup raspberry vinegar
  • 1 tablespoon dry mustard
  • 2 teaspoons fresh thyme leaves, or 1 tsp dried
  • 2 teaspoons fresh tarragon, or 1 tsp dried
  • 2 teaspoons fresh oregano, or 1 tsp dried
  • 1/8 teaspoon black pepper, ground, to taste
  • Method

  • Combine all ingredients in a blender or food processor and blend until pureed.
