Low Fat Chocolate-Fig Pecan Bars Recipe

Ingredients

  • 2 cups oil-purpose flour
  • 3/4 cup granulated sugar, divided
  • 8 tablespoons butter or margarine, chilled, cut in small pieces
  • 8 ounces dried stemmed figs, chopped
  • 1/2 cup chopped pecans
  • 2/3 cup reduced-fat semisweet chocolate baking, chips
  • 2 large eggs
  • 1 egg white
  • 3/4 cup light corn syrup
  • 1 teaspoon vanilla extract

Method

  1. Preheat oven to 350°F.
  2. In medium bowl, stir together flour and 1/4 of the sugar.
  3. Add butter pieces.
  4. With pastry blender or two knives, cut butter into dry ingredients until mixture resembles coarse crumbs.
  5. Mixture will be dry.
  6. Press crust in bottom of lightly greased 13- by 9-inch baking pan.
  7. Bake for 15 minutes, or until edges begin to brown.
  8. Sprinkle figs, pecans and chocolate morsels over crust.
  9. In medium bowl, lightly beat eggs and egg white; gradually beat in remaining 1/2 cup sugar, corn syrup and vanilla until well blended.
  10. Pour over crust.
  11. Return to oven for 20 to 30 minutes, or until filling is firm around edges and slightly soft at center.
  12. Cool on wire rack.
  13. Cut into bars.
  14. Per serving (1 bar): About 190 calories, 2g protein, 33g carbohydrate, 7g fat, 30% calories from fat, 25mg cholesterol, 54mg sodium, 1g fiber
