Ingredients
- 1 cup unsalted margarine, at least 60% vegetable oil
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 egg whites
- 2 teaspoons vanilla
- 2 1/4 cups all-purpose flour
- 1/2 cup oat bran*
- 3 ounces miniature semisweet chocolate pieces, 1/2 cup
Method
- Beat the margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
- Add sugar, brown sugar, baking soda, and salt; beat well.
- Add egg whites and vanilla; beat till well combined.
- Beat in as much flour as you can.
- Stir in remaining flour and oat bran with a wooden spoon.
- Stir in chocolate pieces.
- Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet.
- Bake in a 375°F oven for 8 to 10 minutes or till edges are lightly browned.
- Remove the cookies from the cookie sheet and cool on a wire rack.
- Makes about 50.
- *If you do not have oat bran on hand, you can use rolled oats.
- Process 2/3 cup rolled oats in a covered blender container or food processor bowl till ground; substitute for the 1/2 cup oat bran.
