Ingredients
- 1 cauliflower, trimmed, cut into bite-size pieces , about 2-pounds
- 3/4 cups fresh orange juice
- 3 tablespoons fresh lemon juice
- 1 1/2 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon dried tarragon, crumbled fine
- 1/4 teaspoon freshly ground white pepper
- 1/2 cup chopped fresh parsley
- 1/2 cup finely diced red bell pepper
- 1/4 cup thinly sliced scallion greens, 2 scallions
- 1 teaspoon coarsely grated orange zest
- 1 teaspoon coarsely grated lemon zest
Method
- Arrange cauliflower in a wide microwavable serving dish.
- Cover and microwave on high for 2 minutes, just to begin cooking.
- In a small bowl, combine orange juice, lemon juice, oil, salt, tarragon and pepper.
- Pour evenly over the cauliflower.
- Cover and microwave 2 minutes longer.
- Toss, cover and cook about 2 minutes longer, or until al dente.
- Let stand 2 minutes.
- Uncover and let cool to room temperature.
- Cover and chill for several hours or more.
- To serve, combine parsley, bell peppers, scallions and orange and lemon zest.
- Toss gently with the chilled cauliflower.
- Makes about 4 cups, for 4 servings.
