Low Fat Bran Muffins Recipe

Ingredients

  • Serving Size : 12
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 cups 100% bran
  • 1 1/4 cups skim milk
  • 1/3 cup firmly packed brown sugar
  • 1 egg
  • 1/2 cup applesauce
  • 1/2 cup dried cranberries

Method

  1. Heat oven to 400 F
  2. Mix flour, baking powder, baking soda and cinnamon in large bowl.
  3. Mix cereal, milk and sugar in another bowl; let stand 5 minutes.
  4. Stir in egg and applesauce.
  5. Add to flour mixture; stir just until moistened.
  6. Batter will be lumpy.
  7. Spoon batter into muffin pan lined with foil cups, filling each cup 2/3 full.
  8. Bake for 18 to 20 minutes or until browned.
  9. Makes 12.
