Chunky Keto Tomato Sauce

Ingredients

Yield : 4 cups

  • 28 oz can peeled tomatoes (no sugar added), roughly chopped
  • 1 Tbsp red wine vinegar
  • 1/4 cup olive oil
  • 1/2 tsp black pepper
  • 1 medium onion, chopped fine
  • 1 tsp minced fresh garlic
  • 1 tsp dried basil
  • 1 – 2 tsp dried oregano
  • 1 tsp salt

Method

  1. Combine the ingredients reserving half the chopped tomatoes
  2. Simmer the sauce, whisking occasionally until it has reduced a little, 30-40 minutes
  3. Stir in the remaining tomato and cook another 30 minutes
  4. Taste and adjust seasoning if necessary
