Keto Blackberry Cheese Fat Bombs
Ingredients
Serves: 10.
- 1/2 cup blackberries (fresh or frozen)
- 2 tablespoons mascarpone cheese
- 1 cup coconut oil
- 1 cup coconut butter
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1/2 teaspoon liquid Stevia
- stevia to taste.
Method
- If using frozen blackberries, thaw them in a small bowl.
- Combine the coconut oil, coconut butter, lemon juice and cheese in a large mixing bowl.
- Add the blackberries and using a hand mixer, mix them on low until as smooth as possible.
- Spoon the mixture into a silicone mold and place in the freezer for 30-40 minutes until hardened.
- Keep the fat bombs stored in the fridge.
