Air Fryer Chicken Parmesan
Ingredients
SERVES 4.
- 2 (6-ounce) boneless, skinless chicken breasts
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 4 tablespoons full-fat mayonnaise, divided
- 1 cup shredded mozzarella cheese, divided
- 1 ounce pork rinds, crushed
- 1/2 cup grated Parmesan cheese, divided
- 1 cup low-carb, no-sugar-added pasta sauce
Method
- Slice each chicken breast in half lengthwise and pound out to 3/4 thickness
- Sprinkle with garlic powder, oregano, and parsley
- Spread 1 tablespoon mayonnaise on top of each piece of chicken, then sprinkle 1/4 cup mozzarella on each piece
- In a small bowl, mix the crushed pork rinds and Parmesan
- Sprinkle the mixture on top of mozzarella
- Pour sauce into 6 round baking pan and place chicken on top
- Place pan into the air fryer basket
- Adjust the temperature to 320°F and set the timer for 25 minutes
- Cheese will be browned and internal temperature of the chicken will be at least 165°F when fully cooked
- Serve warm
