Ingredients
- Serving Size : 6
- 1 pound crawfish tails
- 1 cup fresh mushrooms – sliced
- 1 cup green onions – chopped
- 1/2 cup butter – melted
- 4 eggs – well-beaten
- 1/2 cup half ‘n half or light cream
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/8 teaspoon nutmeg
- 1 cup mozzarella – shredded
- 1 9″ pie shell – unbaked
Method
- Saute mushrooms and green onions in butter until tender.
- Set aside.
- In large bowl, combine eggs, milk, salt, dry mustard, nutmeg and cheese.
- Fold in crawfish, mushrooms and onions.
- Pour mixture into pie shell.
- Bake at 400- for 15 minutes.
- Reduce heat to 300- and continue to bake for 30 minutes or until knife inserted in center comes out clean.
- Allow to stand 5 minutes before serving.
