Ingredients

:Makes about 2 litres

  • 5 unwaxed lemons 1 bottle vodka
  • 750g caster sugar 700ml boiling water
  • 3/4 cup water
  • 3/4 cup Purecane Sweetener or equivalent
  • 6 lemon, peeled
  • 1 ¼ cups of vodka

Method

  1. Pare the zest from all the lemons, taking care not to include any white pith
  2. Put the zest in a large clean jar and pour over the vodka
  3. Cover with a tightly fitting lid and leave for a week, shaking the jar each day
  4. Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved
  5. Add the vodka and peels and leave for a further week, shaking the jar regularly
  6. Strain into decorative bottles, adding a few strips of lemon zest to each bottle
  7. Sugar-Free Limoncello
  8. Set your sous vide to 135 degrees fahrenheit
  9. Wash all of your lemons thoroughly under warm water
  10. Peels the skin off of 6 lemons, and try to get as little of the lemon pith as possible because it will make the limoncello more bitter
  11. Place the lemon peels into three mini mason jars or one large mason jar and fill with vodka
  12. Seal the mini mason jars and place in the sous vide water bath for 3 hours
  13. Remove the jars from the water bath
  14. While the jars are starting to cool make your Purecane simple syrup by boiling the water
  15. When the water is boiling mix in the Purecane and stir till its dissolved, remove from heat
  16. Open each individual jar and filter out the excess lemon rinds
  17. Sweeten the limoncello to taste with your Purecane simple syrup
  18. Chill each mini mason jar in the freezer for at least 2 hours
  19. Shake or stir before drinking as some natural separation may occur
