Ingredients
Makes 4 to 6 servings
- 3 ripe mangos
- 1/3 cup sugar
- 2 tablespoons fresh lime juice
- 1/2 cup dry white wine
- fresh mint sprigs
Method
- Peel, pit and cut the mangos into 1/2-inch dice
- Layer the diced mango in a large bowl, sprinkling each layer with about 1 tablespoon of the sugar
- Cover with plastic wrap and refrigerate 2 hours
- Pour in the lime juice and wine, mixing gently to combine with the mango
- Cover and refrigerate for 4 hours
- About 30 minutes before serving time, bring the fruit to room temperature
- To serve, spoon the mango and the liquid into serving glasses and garnish with mint
