Lime Mangos Recipe

Ingredients

Makes 4 to 6 servings

  • 3 ripe mangos
  • 1/3 cup sugar
  • 2 tablespoons fresh lime juice
  • 1/2 cup dry white wine
  • fresh mint sprigs

Method

  1. Peel, pit and cut the mangos into 1/2-inch dice
  2. Layer the diced mango in a large bowl, sprinkling each layer with about 1 tablespoon of the sugar
  3. Cover with plastic wrap and refrigerate 2 hours
  4. Pour in the lime juice and wine, mixing gently to combine with the mango
  5. Cover and refrigerate for 4 hours
  6. About 30 minutes before serving time, bring the fruit to room temperature
  7. To serve, spoon the mango and the liquid into serving glasses and garnish with mint
