Ingredients
- 1 pound (455 g) dried lima beans
- 1½ cups (240 g) chopped onion
- ½ cup (50 g) chopped celery
- 2 large potatoes, peeled and diced
- 1 cup (130 g) sliced carrots
Method
- Wash beans; combine with remaining ingredients in slow cooker
- Add water to cover vegetables and cook on low heat at least 10 hours
- Yield: 6 servings
- Per serving: 217 g water; 192 calories (2% from fat, 16% from protein, 81% from carb)
