Lima Beans Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) dried lima beans
  • 1½ cups (240 g) chopped onion
  • ½ cup (50 g) chopped celery
  • 2 large potatoes, peeled and diced
  • 1 cup (130 g) sliced carrots

Method

  1. Wash beans; combine with remaining ingredients in slow cooker
  2. Add water to cover vegetables and cook on low heat at least 10 hours
  3. Yield: 6 servings
  4. Per serving: 217 g water; 192 calories (2% from fat, 16% from protein, 81% from carb)
