Ligias Portuguese Roast Beef Recipe

Ingredients

  • 3-4 lb. roast
  • 8 sm. potatoes
  • 1 tsp. garlic salt
  • 1 tsp. ground black pepper
  • 1 tsp. salt
  • 1 c. red or white wine
  • 1 onion, sliced
  • parsley, to taste.
  • 1 bay leaf
  • 6 whole cloves
  • 6 whole pepper
  • 1 cinnamon stick
  • 1 tsp. paprika
  • 1 block margarine (1/2 c.)

Method

  1. Make a marinating sauce with the wine, garlic salt, pepper (ground) and salt
  2. Place meat in this sauce for 3-4 hours
  3. Place meat in roast pan with whole potatoes, cover meat with 1 block of margarine
  4. Roast until brown
  5. Remove potatoes and add slices of onion and the rest of the spices
  6. Pour marinate sauce over meat
  7. Add 1-2 cups of water if needed
  8. Salt to taste
  9. When meat is almost done place potatoes back into pan and cook until potatoes and meat are done
