Ingredients
Makes 4 servings
- 1 garlic clove, chopped
- 1 tablespoon chopped shallot
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/4 teaspoon sugar
- 3 tablespoons white wine vinegar
- 1/3 cup olive oil
- 1 medium head romaine lettuce, cut into 1/4-inch strips
- 12 ripe grape tomatoes, halved
- 1/2 cup frozen baby peas, thawed
- 8 kalamata olives, pitted
- 1 ripe Hass avocado
Method
- In a blender or food processor, combine the garlic, shallot, basil, salt, pepper, sugar and vinegar until smooth
- Add the oil and blend until emulsified
- Set aside
- In a large bowl, combine the lettuce, tomatoes, peas and olives
- Pit and peel the avocado and cut into 1/2-inch dice
- Add to the bowl, along with enough dressing to lightly coat
- Toss gently to combine and serve
