Ingredients
- Serves: 6
- 3/4 cup dry lentils, rinsed and drained
- 3 cups sweet potatoes, cut into 1 inch cubed
- 1 1/2 cups green beans, cut into pieces
- 1 1/2 cups baby carrots
- 1/2 cup plain yogurt
- 1 3/4 cup vegetable broth
- 2 garlic cloves, minced
- 1 tsp fresh ginger, chopped
- 1 tsp ground cumin
- 1 tbsp curry powder
- 2 tbsp vegetable oil
- 1/4 cup onion, chopped
- 1/4 tsp black pepper
- 1/2 tsp salt
Method
- Add lentils, carrots, onion, and sweet potatoes into the slow cooker.
- In a pan, heat oil over medium heat.
- Add garlic, ginger, pepper, cumin, curry powder, and salt and stir for 1 minute.
- Stir in broth.
- Pour mixture into the slow cooker and mix well.
- Cover and cook on low for 6 hours.
- Turn heat to high and stir in green beans.
- Cover and cook for another 15 minutes.
- Top with plain yogurt and serve.
