Ingredients
- Serves: 8
- 1 lb dried lentils, rinsed and drained
- 4 cups fresh spinach, chopped
- 4 cups vegetable broth
- 1/4 tsp cinnamon
- 1 1/2 tsp turmeric
- 1/2 tsp cayenne
- 1 tbsp curry powder
- 2 lbs chicken thighs, boneless and cut into pieces
- 6 garlic cloves, minced
- 1 small cauliflower head, cut into florets
- 2 cups carrots, chopped
- 1 large onion, chopped
- 1 tsp salt
Method
- Add all ingredients except spinach into the slow cooker and stir well.
- Cover and cook on high for 3 1/2 hours.
- Add spinach and stir well.
- Cover and cook for another 30 minutes.
- Stir well and serve with rice.
