Lentil Butternut Squash Curry Indian Recipe

Ingredients

  • Serves: 8
  • 2 cups red lentils
  • 4 cups butternut squash, cut into cubes
  • 2 tbsp ginger, minced
  • 1 1/2 tsp curry powder
  • 1 tsp ground coriander
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 14 oz can coconut milk
  • 19 oz can tomatoes, diced
  • 3 cups vegetable stock
  • 1 tsp ground cumin
  • 1/2 tsp salt

Method

  1. Add all ingredients into the slow cooker and stir well.
  2. Cover and cook on low for 8 hours.
  3. Serve and enjoy.
