Ingredients
Makes about 2 1/2 cups
- 1 1/4 cups shelled fresh or frozen edamame
- ¾ cup frozen peas
- 1 garlic clove, crushed
- 1 tablespoon chopped green onions
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground cayenne
- 1/2 cup water
- 2 tablespoons minced fresh parsley or cilantro, for garnish
Method
- In a large saucepan of salted boiling water, cook the edamame until soft, about 10 minutes
- During the last minute, add the peas
- Drain well and set aside
- In a food processor, process the garlic and green onions until finely minced
- Add the cooked edamame and peas, lemon juice, oil, salt and cayenne and process until smooth
- Add up to 1/2 cup of water and process until smooth
- Taste, adjusting seasonings if necessary
- Transfer to a medium bowl and sprinkle with the parsley
- Serve right away or cover and refrigerate for 1 hour to allow flavors to intensify
- This dip is best if used on the same day that it is made
