Ingredients
Makes about 1/2 cup
- 2 1/2 tablespoons fresh lemon juice
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon grated lemon zest
- 1 garlic clove, minced
- 1 teaspoon coarsely ground black pepper
- 1/2 teaspoon ground coriander
- pinch ground cayenne
- 2 tablespoons olive oil
Method
- In a small bowl, combine the lemon juice, soy sauce and sugar, stirring to blend
- Add the lemon zest, garlic, pepper, coriander and cayenne
- Whisk in the oil
- If not using right away, cover and refrigerate until needed
- Properly stored, the marinade will keep for 3 to 4 days
