Lemon-Pepper Flatbread Recipe

Ingredients

Makes 4 flatbreads

  • 2 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • ¾ cup water
  • toasted sesame oil, as needed
  • 1/4 cup sesame seeds
  • 1 1/2 teaspoons lemon-pepper seasoning

Method

  1. In a large bowl, combine the flour and salt and stir in as much of the water as needed until the dough holds together
  2. Knead until smooth, about 5 minutes
  3. Cover with plastic wrap and set aside for 20 minutes
  4. Divide the dough into 4 equal pieces
  5. Lightly flour your hands and shape the pieces into balls
  6. Flatten them on a lightly floured work surface, then roll out into circles about 1/4 inch thick
  7. Preheat the oven to 250°F
  8. Brush the top surface of the dough circles with the oil, then sprinkle them with the sesame seeds and lemon-pepper seasoning, using your fingers to rub in the seeds and seasoning so they adhere to the dough
  9. In a large skillet, heat a thin layer of oil over medium-high heat
  10. Place one of the dough circles in the skillet and cook, turning once, until brown spots begin to appear, about 3 minutes per side
  11. Remove the cooked bread to a heat-proof platter, cover with foil and keep warm in the oven while you cook the remaining flatbreads
  12. Repeat with the remaining dough and serve at once
