Ingredients
Makes 4 flatbreads
- 2 cups all-purpose flour
- 1 1/4 teaspoons salt
- ¾ cup water
- toasted sesame oil, as needed
- 1/4 cup sesame seeds
- 1 1/2 teaspoons lemon-pepper seasoning
Method
- In a large bowl, combine the flour and salt and stir in as much of the water as needed until the dough holds together
- Knead until smooth, about 5 minutes
- Cover with plastic wrap and set aside for 20 minutes
- Divide the dough into 4 equal pieces
- Lightly flour your hands and shape the pieces into balls
- Flatten them on a lightly floured work surface, then roll out into circles about 1/4 inch thick
- Preheat the oven to 250°F
- Brush the top surface of the dough circles with the oil, then sprinkle them with the sesame seeds and lemon-pepper seasoning, using your fingers to rub in the seeds and seasoning so they adhere to the dough
- In a large skillet, heat a thin layer of oil over medium-high heat
- Place one of the dough circles in the skillet and cook, turning once, until brown spots begin to appear, about 3 minutes per side
- Remove the cooked bread to a heat-proof platter, cover with foil and keep warm in the oven while you cook the remaining flatbreads
- Repeat with the remaining dough and serve at once
