Ingredients
- 2 tablespoons butter — see * Note
- 2 teaspoons minced garlic
- 1 teaspoon lemon pepper
- 2 cod fillets – (4 to 6 oz ea) — thawed if necessary
- lemon wedges.
Method
- * Note: If desired, olive oil may be substituted for butter
- Melt butter in large skillet over medium-high heat
- Stir in garlic
- Season cod fillets on both sides with lemon pepper
- Place fillets in pan and cook for 10 minutes per inch of thickness, measured at thickest part, or until fish flakes when tested with a fork
- Flip fillets halfway through cooking to brown on both sides
- Sprinkle with lemon juice before serving
- This recipe yields 2 servings
- Recipe may easily be doubled
