Ingredients
Makes about 2 cups
- 1 cup unsalted raw cashews
- 1/3 cup pure maple syrup or agave nectar
- 1/4 cup fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 cup firm silken tofu, drained and pressed
- 1 teaspoon grated lemon zest
Method
- In a blender, grind the cashews to a fine powder
- Add the maple syrup, lemon juice and vanilla and process until smooth
- Add the tofu and lemon zest and process until smooth and creamy
- Taste, adjusting seasonings, adding more sweetener or lemon juice if needed
- Transfer to a bowl, cover and refrigerate until chilled, 1 hour
- Store leftover sauce covered in the refrigerator for up to 3 days
