Lemon-Cashew Creme Recipe

Ingredients

Makes about 2 cups

  • 1 cup unsalted raw cashews
  • 1/3 cup pure maple syrup or agave nectar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 cup firm silken tofu, drained and pressed
  • 1 teaspoon grated lemon zest

Method

  1. In a blender, grind the cashews to a fine powder
  2. Add the maple syrup, lemon juice and vanilla and process until smooth
  3. Add the tofu and lemon zest and process until smooth and creamy
  4. Taste, adjusting seasonings, adding more sweetener or lemon juice if needed
  5. Transfer to a bowl, cover and refrigerate until chilled, 1 hour
  6. Store leftover sauce covered in the refrigerator for up to 3 days
