Ingredients
Makes 4 servings
- 1 1/2 cups all-purpose flour
- 1/2 cup old-fashioned oats
- 1/4 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups soy milk
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup vegan margarine, melted
- 1/2 cup fresh blueberries
Method
- Lightly oil the waffle iron and preheat it
- Preheat the oven to 225°F
- In a large bowl, combine the flour, oats, sugar, baking powder, salt and cinnamon
- Set aside
- In a separate large bowl, whisk together the soy milk, lemon juice, lemon zest and margarine
- Add the wet ingredients to the dry ingredients and blend with a few swift strokes, mixing until just combined
- Fold in the blueberries
- Ladle 1/2 to 1 cup of the batter (depending on the instructions with your waffle iron) onto the hot waffle iron
- Cook until done, 3 to 5 minutes for most waffle irons
- Transfer the cooked waffles to a heatproof platter and keep warm in the oven while cooking the rest
