Lamb With Peas Recipe

Ingredients

  • Serving Size : 6
  • 3 pounds lamb
  • 1/2 pound butter or margarine
  • 4 scallions – chopped
  • 1 1/2 pounds tomatoes, peeled – strained or
  • 1 tablespoon tomato paste + 2 cup water
  • 1 tablespoon dill – chopped
  • 1 tablespoon parsley – chopped
  • salt and pepper to taste
  • 4 pounds peas, shelled – washed
  • water as needed

Method

  1. Cut meat into 1 1/2 cubes (approx.
  2. Wash and drain.
  3. Brown butter in a pot.
  4. Add meat and brown well.
  5. Add scallions, and cook until soft but not dark.
  6. Add tomatoes (or diluted tomato paste), dill, parsley, salt and pepper.
  7. Simmer about 20 min Add peas and an extra 1 cup water.
  8. Cover, simmer until all liquid is absorbed and only butter remains as a sauce.
