Lake Havasu Casserole Recipe

Ingredients

  • Serves 4-6
  • 4 cup mashed potatoes
  • 1 cup sour cream
  • 1/2 teaspoon cayenne pepper
  • 1 medium onion, chopped
  • 1/4 cup butter or margarine
  • 1 (10 ounce) package frozen chopped spinach, thawed, well drained and squeezed dry 1/2 cup green chile, chopped
  • 1 cup Colby cheese, shredded
  • Salt/pepper to taste

Method

  1. Combine all ingredients except the cheese in a well-greased glass baking dish
  2. Sprinkle the cheese over the top and bake in a 350 degree F oven for 20 minutes
