Lake Havasu Casserole Recipe
Ingredients
- Serves 4-6
- 4 cup mashed potatoes
- 1 cup sour cream
- 1/2 teaspoon cayenne pepper
- 1 medium onion, chopped
- 1/4 cup butter or margarine
- 1 (10 ounce) package frozen chopped spinach, thawed, well drained and squeezed dry 1/2 cup green chile, chopped
- 1 cup Colby cheese, shredded
- Salt/pepper to taste
Method
- Combine all ingredients except the cheese in a well-greased glass baking dish
- Sprinkle the cheese over the top and bake in a 350 degree F oven for 20 minutes
