Yield: 10 cookies (1 per serving)
- ¼ cup (28g) ground flax seeds
- 1 teaspoon ground cinnamon, plus extra for dusting if desired
- ½ teaspoon baking powder
- ½ cup (128g) unsweetened creamy almond butter, room temperature
- 2 Flax Eggs (see Flax Eggs)
- 2 tablespoons (30 ml) unsweetened coconut milk or other nondairy milk of choice
- ¼ cup (48g) granulated sweetener
- 1 teaspoon vanilla extract
Method
- Preheat the oven to 350°F (177°C) and line a cookie sheet with parchment paper

- Using a spoon, scoop the dough onto the lined cookie sheet to make 10 cookies, about 2 tablespoons (30 ml) each

- Allow to cool and set up for at least 15 minutes before eating
