Ingredients
- 1/4 cup (60 ml) peanut oil
- 2 pounds (910 g) fresh spinach, washed and dried
- 2 cloves garlic, crushed
Method
- Heat the oil in a heavy skillet or wok over high heat
- Add the spinach and garlic, stir-fry for only a minute or two, and then serve
Makes 6 servings
- Each with 6 grams of carbohydrates and 4 grams of fiber, for a total of 2 grams of usable carbs and 4 grams of protein
