- 1 chicken breast, skinless
- 1/4 mayonnaise
- 1/4 cup sour cream
- 2 tablespoons Cottage cheese, room temperature
- salt and black pepper, to taste
- 1/4 cup sunflower seeds, hulled and roasted
- 1/2 avocado, peeled and cubed
- 1/2 teaspoon fresh garlic, minced
- 2 tablespoons scallions, chopped
Method
- Bring a pot of well-salted water to a rolling boil.
- Add the chicken to the boiling water; now, turn off the heat, cover, and let the chicken stand in the hot water for 15 minutes.
- Then, drain the water; chop the chicken into bite-sized pieces.
- Add the remaining ingredients and mix well.
- Place in the refrigerator for at least one hour.
- Serve well chilled.
