Ingredients
Serving Size : 40
- 1/2 cup butter – softened
- 1 cup Splenda granulated sweetener
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 tablespoons Splenda granulated sweetener
- 1 teaspoon cinnamon
Baking Flour Substitute
- 2/3 cup oat fiber
- 1/2 cup almond flour
- 1/3 cup golden flax
- 1/4 cup psyllium husk powder
- 1 teaspoon xanthan gum
Method
- Mix margarine on high speed for 30 seconds
- Add soy flour, all-purpose flour, 1 cup sugar, egg, vanilla, baking soda and baking powder
- Beat together
- Beat in the whole wheat flour
- Chill dough for 1 hour
- Shape into 1″ balls
- Roll the balls in sugar/cinnamon mixture and place on a greased cookie sheet
- Bake in 375:F oven for 10 minutes
- Cool on a wire rack
