Keto Scotch Eggs Recipe
Ingredients
Toppings crushed pork rinds, dried minced onion, parsley flakes or fresh chopped parsley, grated parmesan cheese, almond meal
- 4 eggs, hard-boiled or soft-boiled
- 1 pound sausage or ground beef
Sausage seasonings – salt, paprika, black pepper, nutmeg, cayenne pepper, sage and thyme
- optional – italian, indian or mexican seasonings
Method
- Hard boil eggs
- Shell and set aside
- Make four balls with the meat, flatten into circles
- Place one egg in the center of each circle
- Close the meat around each egg and pat until evenly distributed
- Put in the refrigerator 30-60 minutes or more
- Before putting the eggs in the oven roll them in (or sprinkle on) any toppings
- Put the eggs on a baking sheet and bake 20-30 minutes at 350 degrees
