Keto Roasted Cabbage With Balsamic Vinegar Recipe

Ingredients

  • 1/2 head red cabbage
  • 1/2 head cabbage
  • 3 tablespoons (45 ml) olive oil
  • salt and pepper
  • 2 tablespoons (30 ml) balsamic vinegar

Method

  1. Preheat oven to 450°F (230°C, or gas mark 8)
  2. Coarsely chop the two kinds of cabbage and separate the leaves
  3. Put it in a good-sized roasting pan and toss it with the olive oil until its coated all over
  4. Sprinkle with salt and pepper and toss again
  5. Put the cabbage in the oven and roast for 15 to 20 minutes, stirring once or twice, until its just browning around the edges but still not entirely limp
  6. Sprinkle with the balsamic vinegar, toss again, and serve

Makes 5 to 6 servings
