- 1 pound pork cutlets
- sea salt and ground black pepper, to taste
- 1/2 teaspoon thyme
- 1/2 teaspoon rosemary
- 1 teaspoon basil
- 1 tablespoon lard, room temperature
The Sauce:
- 2 tablespoons sherry
- 1/4 cup sour cream
- 1/4 cup beef bone broth
- 1 teaspoon mustard
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder
Method
- Season the pork cutlets with salt, pepper, thyme, rosemary, and basil.
- Melt the lard in a pan over medium-high heat; now, sear pork cutlets for 3 minutes; turn them over and cook for 3 minutes on the other side.
- Reserve.
- Deglaze your pan with sherry; now, add the remaining ingredients and cook on medium-low heat until the sauce has thickened slightly.
- Add the reserved pork and let it simmer for a couple of minutes or until everything is heated through.
- Spoon the sauce over pork cutlets and serve.
