Ingredients
- 2 tablespoons bacon grease
- 1/4 cup diced onion
- 1/2 cup diced green pepper
- 1/3 cup diced tomato
- 3 eggs, beaten
- salt and pepper.
Method
- Heat the bacon grease in a heavy skillet over lowest heat
- Add the onion and saute for 5 to 7 minutes or until the onion is soft
- Add the pepper and the tomato
- Stir, cover, and cook at lowest heat for 15 minutes, stirring once or twice
- You want the vegetables to be quite soft
- Pour in the eggs and scramble slowly until the eggs are just set
- Add salt and pepper to taste and serve
Makes 1 serving grams of carbohydrates and 3 grams of fiber, for a total of 10 grams of usable carbs and 18 grams of protein
