Keto Mini Stuffed Peppers Recipe

  • 2 teaspoons olive oil
  • 1 teaspoon mustard seeds
  • 5 ounces ground turkey
  • salt and ground black pepper, to taste
  • 10 mini bell peppers, cut in half lengthwise, stems and seeds removed
  • 2 ounces garlic and herb seasoned chevre goat cheese, crumbled

Method

  1. Direction
  2. Heat the oil in a skillet over medium-high heat.
  3. Once hot, cook mustard seeds with ground turkey until the turkey is no longer pink.
  4. Crumble with a fork.
  5. Season with salt and black pepper.
  6. Lay the pepper halves cut-side-up on a parchment-lined baking sheet.
  7. Spoon the meat mixture into the center of each pepper half.
  8. Top each pepper with cheese.
  9. Bake in the preheated oven at 400 degrees F for 10 minutes.
