Ingredients
- 3 boneless, skinless chicken breasts
- 3 tablespoons (45 ml) olive oil
- 1 medium onion, chopped
- 1/2 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- 1/4 teaspoon black pepper
- 1 tablespoon (6 g) freshly grated ginger
- 1 can (14 1/2 ounces, or 410 g) diced tomatoes
- 2 cloves garlic, crushed
- 1 cup (240 ml) chicken broth
Method
- Cut the chicken breasts into cubes
- Heat the olive oil over medium heat in a heavy skillet and add the chicken and onions
- Saute for a couple of minutes and then stir in the coriander, cumin, cinnamon, turmeric, and pepper
- Cook until the chicken is white all over
- Add the ginger, tomatoes, garlic, and broth; stir
- Cover, turn the heat to low, and simmer for 15 minutes
