Ingredients
Serves: 16.
- 7 ounces coconut butter, softened
- ¼ cup extra virgin coconut oil, softened
- fresh lemon zest from 1-2 lemons.
- 15-20 drops Stevia extract or other sweetener to taste
- a pinch of salt.
Method
- Thoroughly wash the lemons and zest them using a fine grater.
- In a small bowl, soften the coconut oil and coconut butter.
- Add the sweetener, pinch of salt and lemon zest.
- Mix well to combine.
- Drop about 1 tablespoon of coconut mixture into a silicone candy mold or candy paper liners and freeze for an hour until they hardened.
- Store the done candies in the fridge.
