Ingredients
- 1 tablespoon (14 g) butter
- 1/4 small onion, minced
- 1 package (10 ounces, or 280 g) frozen, chopped spinach, thawed
- 1/4 cup (40 g) crumbled feta cheese
- 1/4 cup (55 g) cottage cheese
Method
- Melt the butter in a heavy skillet over medium heat
- Add the onion and let it sizzle for just a minute
- Add the spinach and saute, stirring now and then, for 5 to 7 minutes
- Add in the cheeses and stir until they start to melt
- Let the spinach cook for another minute or so and then serve
Makes 3 servings
- Each with 6 grams of carbohydrates and 3 grams of fiber, for a total of 3 grams of usable carbs and 7 grams of protein
