Keto Pecan Sandies

Ingredients

  • 1 cup (225 g) butter, at room temperature
  • 1 cup (25 g) Splenda
  • 1 egg
  • 1 1/2 cups (200 g) vanilla whey protein powder
  • 1 1/2 cups (185 g) chopped pecans
  • 1/2 teaspoon salt

Method

  1. Preheat the oven to 325°F (170°C, or gas mark 3)
  2. Beat the butter and Splenda together until light and creamy
  3. Beat in the egg, mixing well
  4. Then beat in the protein powder, pecans, and salt
  5. Spray a cookie sheet with nonstick cooking spray
  6. Form the dough into balls about the size of a marble and flatten them slightly on the cookie sheet
  7. Bake for 10 to 15 minutes or until golden

Makes 4 1/2 dozen cookies

  1. Each with 2 grams of carbohydrates, a trace of fiber, and 5 grams of protein
