Ingredients

- 1 teaspoon butter
- 1 pound pork ribs, boneless and cut into small pieces
- 1 shallot, chopped
- 2 garlic cloves, minced
- 1 (1/2-inch) piece fresh ginger, chopped
- 1 cup water
- 2 cups chicken stock
- 1 tablespoon patis (fish sauce)
- 1 cup fresh tomatoes, pureed
- 1 cup cauliflower rice
- sea salt and ground black pepper, to taste
Method
- Melt the butter in a pot over medium-high heat.
- Then, cook the pork ribs on all sides for 5 to 6 minutes.
- Add the shallot, garlic and ginger; cook an additional 3 minutes.
- Add the remaining ingredients.
- Let it cook, covered, for 30 to 35 minutes.
- Ladle into individual bowls and serve.
