Keto Falafel Salad Recipe

Ingredients

Yield: 2 servings

  • 4 lightly packed cups (120g) fresh baby spinach
  • ½ cup (60g) sliced radishes
  • ½ cup (50g) sliced cucumbers
  • ½ cup (30g) shredded red cabbage
  • 1 recipe No-Cook Falafel (see No-Cook Falafel)
  • ¼ cup (60 ml) Tahini Dressing (see Tahini Dressing)

Method

  1. Divide the spinach, radishes, cucumbers, and cabbage between 2 bowls
  2. Top with the falafel and dressing
  3. Refrigerate leftover salad separately from the falafel and dressing for up to 3 days
