- 1/2 pound ground pork
- 1 pound ground turkey
- 1 garlic clove, minced
- 4 tablespoons pork rinds, crushed
- 2 tablespoons shallots, chopped
- 4 ounces mozzarella string cheese, cubed
- 1 ripe tomato, pureed
- salt and ground black pepper, to taste
Method
- In a mixing bowl, thoroughly combine all ingredients, except for the cheese.
- Shape the mixture into bite-sized balls.
- Press 1 cheese cube into the center of each ball.
- Place the meatballs on a parchment-lined baking sheet.
- Bake in the preheated oven at 350 degrees F for 18 to 25 minutes.
