Keto Coconut Lime Fat Bombs Recipe

Ingredients

Makes: 24.:

  • stick unsalted butter
  • 3/4 cup coconut oil
  • ounce unsweetened, shredded coconut
  • zest and juice of 2 small limes.
  • ounces cream cheese, softened
  • ¼ cup unsweetened coconut cream
  • 1/4 teaspoon vanilla extract

Method

  1. Sugar-free sweetener of your choice to taste
  2. In a saucepan over medium heat, melt the butter and coconut oil.
  3. Once melted, remove from heat and stir in the lime zest and juice.
  4. Stir in the vanilla and shredded coconut.
  5. Then add the softened cream cheese and coconut cream.
  6. Mix until smooth as possible.
  7. If you notice that the cream cheese has separated, don’t worry about that as it won’t affect the result.
  8. Add the sweetener to your taste and mix well.
  9. Spoon the mixture into candy molds or candy paper liners and place in the freezer for about an hour.
  10. Once they are set, remove from the molds.
  11. Store the candies in an airtight container in the freezer.
